Carlo’s Primavera
Wednesday, April 11th 2007.Spring has arrived some time ago in Chapel Hill. Once in a while, like today, she has an off-day and with North Carolina’s history of cutting my second-favorite season short, we’d better enjoy it while it lasts before the blistering heat of Summer hits us hard. Carlo very eloquently worded the feelings Spring evoke for me:
Finally. Spring. Asparagus; young lamb; artichokes, grilled or braised or fried; peas and pea shoots; spring onions (ramps); salmon grilled or poached, with pesto; morel mushrooms; bulb fennel sliced and eaten raw or poached tender; lemonade with amarena cherries at the bottom of the glass; yum.
Yum indeed.
